Learn from our experts about the lost art of butchery and experience more than just chopping meat. Avedano’s classes are experiential— hands-on, hands-in working and learning forums designed with you, the home chef, in mind. Our goal is to provide useful and easy-to-understand information about specific foods and preparations.  You will take home your goodies and a summary of what you learned for future reference.

* Classes have a minimum of 4 students, if minimum is not met, students will be contacted about rescheduling within one week of class.*

BUTCHERY FOR ADULTS

Taught by Jason Wilcox or David Jones

The goal of this intensive class is to teach you the specifics of the art of home butchery and grant you knife-wielding dominion over your kitchen. You will break down a lamb and a pig carcass. You will receive an outline of the class and diagrams that help you to classify cuts.  We will discuss cooking suggestions and tools to further develop your knife skills and techniques.

Each participant will receive lunch and at least $100 worth of meat to take home.

You will walk away with a lot of knowledge and a lot of meat.

Time: 1 pm to 4 pm
Enrollment: 6 people
Price: $350 per person

ADVANCED BUTCHERY:  One on One with ½ a Hog

An intense look and demonstration of how to break a half hog. Students will learn proper knife, saw and cleaver skills required of a butcher, while practicing cutting retail cuts.

Students will take home 10 lbs of pork as well as a cuts list of what the students have learned. This class is reserved for a maximum of two people and costs $400 per person or $700 per couple.

SAUSAGE MAKING 101

Offer your loved ones the gift that’s already stuffed in a package: SAUSAGE! Led by our house sausage maker, Jason, you’ll learn how to bind, case, and link sausages, while making your very own  to take home.

There are 6 slots available at $115 per person, and everyone gets to take home some of the finished product! We will make two varieties of sausage, and Jason will teach you the finer details of what goes into your seasoning.
