Learn from our experts about the lost art of butchery and experience more than just chopping meat. Avedano’s classes are experiential— hands-on, hands-in working and learning forums designed with you, the home chef, in mind. Our goal is to provide useful and easy-to-understand information about specific foods and preparations.  You will take home your goodies and a summary of what you learned for future reference.

* Classes have a minimum of 4 students, if minimum is not met, students will be contacted about rescheduling within one week of class.*

BUTCHERY FOR ADULTS

Description: The goal of this intensive class is to teach you the specifics of the art of butchery and grant you knife-wielding dominion over your kitchen. You and six others will break down a lamb and a half hog. Students can purchase any meat they cut during the class for a wholesale (15%) discount. 

One week cancellation policy. If class does not fill up one week prior we will schedule you for the next class date or give a refund.

ADVANCED BUTCHERY: Private Lesson

By appointment
Enrollment: Single or Double
Price: $500-single $900-couple

Description: An intensive session with the student’s choice of a half hog or whole lamb. Students will learn knife, saw, and cleaver skills required of a butcher while practicing retail cuts. For the full experience, it is recommended to take “Butchery for Adults” before a private class, but anyone with a steady hand and a willingness to get a bit messy can take this class.

SAUSAGE MAKING 101

Price: $175/Person
Take Home: 2 lbs of sausage

Description: Offer your loved ones the gift that’s already stuffed in a package: Sausage! You’ll learn all the steps of sausage production: grinding and seasoning meat, pumping the casings, and twisting up the final product. Take home 2 lbs of sausage at the end of the class.
